Homemade Granola

Ingredients

  • 1/2 cup coconut oil melted
  • 1/4 cup packed light brown sugar
  • 1/4 cup maple syrup
  • 4 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 4 cups old-fashioned rolled oats
  • 1 1/4 cups walnuts chopped coarsely
  • 1 cup unsweetened flaked coconut
  • 3/4 cup unsalted sunflower seeds
  • 1 cup raisins

Instructions

  • Preheat the oven to 325°F (163ºC). Line a baking sheet with parchment paper or a silicone baking mat.
  • Measure coconut oil, brown sugar, maple syrup, vanilla extract, and salt into a large mixing bowl. Whisk until well combined.
  • Add oats, walnuts, flaked coconut, and sunflower seeds to the bowl. Use a heavy wooden spoon or clean hands to mix the ingredients until thoroughly combined.
  • Transfer mixture to the lined baking sheet and spread evenly. Use a metal spatula to firmly press oat mixture into a thin, even layer.
  • Bake for 40 to 45 minutes or until golden brown all across the top (not just the edges). Remove from the oven and allow to cool on the baking sheet.
  • Once cool, use your hands to break granola into pieces. Gently mix in the raisins.
  • Store in an airtight container in the pantry for up to 2 months.
