The beds of herbal roots are now churned chocolate dirt. This final garden chore of the season is cold, hard, and messy work. All the roots need to be washed, scrubbed, and carefully processed. Once this is done and the roots are safely drying, I return to the garden. The other beds are neatly tucked in for the winter with cover crops of peas and oats and winter rye. I cover the raw dirt from the root beds with rustling brown leaves, and I touch the tall stalks of mullein that will feed birds through the cold winter.
