Freeze-Drying the Harvest

I have had a freeze dryer for 6 years and use it for making fresh fruit snacks but I’ve always struggled with freeze drying meals or veggies because they never rehydrate quite right. So I decided to buy this book for the Encyclopedia of Freeze Drying Foods in has in part 2. I am so glad I did!! It has been an amazing resource. It has a page dedicated to each food I want to dry and gives specific instructions on how to pretreat, if there are any special instructions and how to rehydrate perfectly. It has helped me figure out why some things I’ve freeze dried haven’t turned out as good as I would have hoped and how to get them right moving forward. I could spend hours researching and sifting through multiple Facebook groups looking for the perfect way to process everything, but Carolyn Thomas has put in all the hard work of trial and error so I don’t have to. I wish I would have had this when I started my freeze drying journey—it would have saved me a lot of wasted food. And I’d love to gift it to friends and family when they invest in a freeze dryer.

I just got the book and I’m so excited. Haven’t read a lot yet but planning on it soon. Looks amazing and I know it will teach me a ton of things. Thank you for putting out this wonderful book!!

I purchased this book so I could plan for next year’s harvest. I am glad I did, because I would have purchased a much larger unit than I really need. I know what my plan is going forward in 2026. Great resource!

Thank you for taking your time to write such a terrific book. It gives me the information I’ve been looking for to feel more confident about freeze drying!
My only consideration is the paper that it is printed on. As I am older I noticed the shiny paper makes it difficult to see.

I have 2 other books for freeze-drying, but this book is by far the best. I have been freeze-drying for about a year, and this book, with all its information, is outstanding. If you are starting or have been doing it for a while, this book is a must-have.

The best and most complete book on freeze-drying. This will be most helpful to my daughter and her children that want to get started with freeze-drying

Best time saving reference tool yet!!!!

I would first like to say how wonderful your staff is at responding to problems. I preordered my book. I was following the tracking when it was delayed in Kansas City. I contacted my local post office and filed a claim with them with no results. Your staff was kind enough to get another book out to me right away. I never received the first book (and will return it if it ever shows up). So, I’m a month late reading but am blown away with the quality of the pictures and content. It is answering many questions I had about deciding on which machine to purchase and how best to set it up. Thank you so much!
